Prairie Bay chef to be at Pine River Market Square on Friday

The Pine River Market Square, a farmers' and crafters' market, will host Chef Matt Annand of Prairie Bay Restaurant in Baxter from 2:30-5:30 p.m. Friday, Sept. 12, in downtown Pine River.

The Pine River Market Square, a farmers' and crafters' market, will host Chef Matt Annand of Prairie Bay Restaurant in Baxter from 2:30-5:30 p.m. Friday, Sept. 12, in downtown Pine River.

Annand is originally from Backus. He worked for local restaurateur Iven Hudalla at a restaurant for 17 years, and eventually studied at the Culinary Institute of America in Hyde Park, New York, where he graduated with honors in 1997.

Annand worked at the Scottsdale Princess Resort at Restaurant Marquesa - a five-diamond, four-star restaurant - and then worked as sous chef at the Auberge du Soleil in California wine country.

He returned to work for the Hudallas as executive chef from 2001 until their restaurant came under new ownership in 2005.

Annand has created relationships with more than 40 farmers in the area and as the seasons progress, Prairie Bay has a constant supply of fresh goods.

On Friday, Annand will select fresh produce from the market vendors to create a dish. The Prairie Bay Food Truck, Side Dish, has visited the Pine River Market Square over the past few years.

The Pine River market remains open through the end of September. New this year, there will be three indoor markets from 9 a.m. to 1 p.m. Saturdays, Oct. 11,Nov. 15 and Dec. 13, at The Warehouse.
