Cook the noodles according to package directions.
In a medium skillet warm the oil until it is warm, but not hot. Add the garlic, parsley, oregano, thyme, salt and pepper. Let the seasonings steep for 2 to 3 minutes. Do not let the garlic brown or the sauce may become bitter.
Drain the noodles and place in a bowl. Pour the olive oil over the noodles and toss gently.
If desired, in a skillet combine the olive oil and butter. Cook over medium heat until the butter is melted and the mixture is hot. Add the shrimp and cook just until the shrimp is pink, 2-3 minutes. Add the shrimp to the pasta and serve.
If desired, sprinkle individual plates of pasta with shredded cheese.
