Chef's Hat recipe: Balsamic Summer Tomatoes

5 fresh tomatoes (any type of sandwich tomato works well, but use heirloom if you can)

5 green onions, chopped, use green and white parts of the onions

1/2 cup olive oil

1/4 cup balsamic vinegar (you can use a flavored balsamic vinegar to add a different taste)

1/4 cup shredded mozzarella cheese

Core and slice the tomatoes, and then place them on a serving platter.

Sprinkle the green onions over the tomatoes.

In a measuring cup or small bowl whisk together the olive oil and balsamic vinegar. Pour over the tomatoes. Let sit for 3-5 minutes so the flavors blend together. Sprinkle with the cheese and serve immediately.
