Renegade Chef: Baked Belgian Endives
8 medium endives, outer leaves removed
3 tablespoons butter, cut into pieces
2 tablespoons lemon juice
1/4 cup chicken broth, boiling
1/2 cup panko bread crumbs
2 tablespoons grated parmesan cheese
Fresh cracked pepper
Heat oven to 325 degrees and position the rack in center. Lightly butter an 8-inch square baking dish. Halve the endives lengthwise and place 1/2 in the prepared baking dish. Top with 1/2 the butter and lemon juice. Repeat process to create a second layer. Pour the boiling chicken broth over the top. Cover and bake for 45 minutes.
Uncover and sprinkle the bread crumbs, parmesan cheese and cracked pepper over the top of the endives. Increase oven temperature to 375 and bake 15-20 minutes.
