Actually, just about any kind of cake could be called a coffee cake; but the term generally refers to a creamy type of cake that has some kind of streusel, raisin or cinnamon topping. And you don't have to eat coffee cake along with a cup of coffee - but it does go quite well with that first cup of java in the morning. Illustration

It seems like there is no limit to what you can bake in a muffin tin. Some recipes that are baked in a muffin pan aren't much different than if you just baked or fried the ingredients. Illustration

It is that time of year again, possibly even the tail end, weather pending (I'm new at this so I dunno). It's time to tap maples. The concept of maple production is fantastic, if you ask me. It has great tradition. You make something delicious and the end result must be very satisfying to justify the work being put into it. Illustration

The skin could actually be left on for certain Chinese or traditional Native American soups. I decided to use it in a Chinese soup, but without the skin mainly because I am afraid nobody but me will eat it if the skin is left on. However, if you've ever eaten fried fish that was merely scaled, this should not be a problem to you. Illustration

Most people are familiar with the concept of sourdough. Most would be amazed to learn there are some sourdough starters that have been cared for and have thrived for decades. This is because the strain of yeast that creates sourdough can be kept growing much like a plant. You feed it, split it off, care for it and when it is time, you make food from a small portion and reserve the rest. Illustration

I'm guessing this is a very familiar scenario in single-parent households. In such cases, I imagine kid meals look a lot like ours did. Macaroni and cheese, ramen, spaghetti, hot dogs, summer sausage sandwiches and foods you could either microwave, toast or cook in water on the stove. Illustration
