Oven Fried Fish Fillets

2/3 cup milk or light cream

1 large egg

1/2 cup panko crumbs

1/2 cup seasoned bread crumbs, such as garlic herb or Italian

1/4 cup grated Parmesan cheese

4 fish fillets, haddock or similar mild white fish

4 tablespoons butter, melted

Heat oven to 450 degrees. Line a baking pan with foil and oil or spray with nonstick cooking spray. Dredge fish in milk and egg mixture, then coat thoroughly with the crumb mixture. Arrange on the pan. Drizzle with melted butter.

Bake for 15 to 20 minutes, until fish flakes easily with a fork.
