The Chop-Chop Salad
5 ounces lettuce (romaine or iceberg lettuce), chopped into small pieces
3 ounces (1 small) sweet potato, peeled, boiled, diced into large pieces
1/4 cup dried cranberries
1/2 cup seedless grapes (red or green) chopped in half
1/2 apple, peeled and diced (use a sweet apple like a Pink Lady)
1/4 cup toasted almonds
4 ounces grilled chicken breast
