Basic Balsamic Vinaigrette
3 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 garlic clove, minced, or 1 teaspoon jarred garlic
1/2 cup olive oil
1/2 teaspoon sugar (if desired)
Salt and pepper to taste
Place all ingredients in a jar with a tight fitting lid. If the mixture is too sour for you, start by adding 1/4 teaspoon sugar. Add a little salt and pepper and re-taste the dressing. If it is still too sour, add the remaining 1/4 teaspoon sugar. Shake to mix well.
This is great on any lettuce/green type salad.
Stores in the refrigerator for up to 3 weeks.
