Duck Stock Reduction
Neck and giblets from 1 duck
½ teaspoon salt
8 black peppercorns
Combine all the ingredients in a medium saucepan, cover with water and bring to a boil. Turn down heat and cook at a very slow simmer for 1 hour. Strain into a small saucepan and reduce over medium heat until ½ cup remains, 10 to 15 minutes.
