2 12 ounce jars pickled herring
2 tablespoons fresh lemon juice
1 Granny Smith apple, cored
1 large sweet onion, thinly sliced
11//2 cups sour cream
¼ cup prepared horseradish, drained
¼ cup finely chopped fresh dill
½ teaspoon freshly ground black pepper
Drain the herring well. Pour lemon juice into a large bowl. Cut the apple in small pieces and add to the lemon juice. Add the herring and onion and combine.
