Token Vegetable

1 large bunch of broccoli (about 1-1/2 pounds)

1 cup water

1 tablespoon olive oil

1-1/2 teaspoons minced fresh garlic

1/4 teaspoon black pepper

1/2 teaspoon salt

Cut the broccoli into stalks and trim the stems. Cut the stalks, along with the florets, into 2-inch lengths.

Bring the water to boil in a small shallow saucepan. Add the broccoli, cover and boil over high heat three to four minutes and drain.

Heat the oil in a large skillet. Add the garlic and sauté for 10 seconds. Add the broccoli, salt and pepper and toss until heated through. Makes three to four servings.
