2 cups flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
4 beaten eggs
1 16-ounce can pumpkin
1 1/2 cups sugar
1 cup vegetable oil
1 teaspoon salt
Cream cheese frosting (see below)
Candied pumpkins (for decorating, if desired)
In a medium sized bowl, stir together flour, baking powder, cinnamon, baking soda and one teaspoon salt.
In another bowl, combine eggs, pumpkin, sugar and vegetable oil.
Slowly add the dry ingredients to the pumpkin mixture. Mix until well combined.
Spread batter in an ungreased 15- by 10- by 1-inch baking dish. Bake in a 350-degree oven for 25 to 30 minutes. A fork should come out clean when inserted into the middle of the bars. Let cool completely and top with cream cheese frosting. Top with candied pumpkins.
