The Simple Life Burger

A simple burger that will suit the tastes of those who don’t want a lot of extras in their burger

8 ounces chuck, trimmed, cut into 1 1/2-inch cubes (or ground chuck if available)

8 ounces sirloin, trimmed, cut into 1 1/2-inch cubes (or ground sirloin if available)

1/2 teaspoon kosher salt

1/4 teaspoon white pepper

1/2 teaspoon Chicago steak seasoning

If you can’t find ground meat, separate the meat into batches. Place the chuck and the sirloin in a food processor and pulse 10 times. Combine the chuck, sirloin and spices in a large bowl. Mix with your hands and form the meat into approximately 4 or 5 patties. (You should easily get 4-5 patties.) Do not overwork the meat or it will become tough.

Start up a grill or heat a cast iron skillet over medium-high heat. Once the grill is hot, place the hamburger patties in the pan or on the grill.

For medium-rare burgers, cook the patties for 4 minutes on each side. For medium burgers, cook the patties for 5 minutes on each side. Turn the burgers only once during the cooking process.
