Microwave Peanut Brittle

1/2 cup light corn syrup

1 cup sugar

1 1/2 cups salted, dry-roasted peanuts

1/4 teaspoon salt

1 1/2 teaspoons butter

1 teaspoon vanilla

1 teaspoon baking soda

In a microwavable 2-quart dish, combine corn syrup and sugar and blend well. Cook in microwave on high for 4 minutes. Stir in nuts and salt. Return to microwave and cook on high 4 more minutes. Add butter and vanilla and blend well. Cook for 1 1/2 minutes on high. Remove from microwave and stir in baking soda until mixture is light and foamy. Pour onto a lightly greased cookie sheet and spread thin. Cool completely and break into about 36 pieces.
