Some Easy, Some Challenging, Some Squarely-in-Between
Throughout 2011, just as I've done in years past, I've kept track of the recipes you've told me that you've liked most. This year's favorites came from recipes of my own, from cookbooks and on-line sources and from readers, just like you. In April, Bluffton Today reader, Charlotte Ward, of Hilton Head Island, wowed us with her recipe for "Salmon Roast with Feta and Spinach." July's recipe for "Grilled Lime-Wine Marinated Shrimp" gained high marks from fans of grilling, and folks intrigued by the notion of making an up-scale ravioli dish from store-bought wontons, raved about September's "Wonton Sweet Potato Ravioli with Calvados-Laced Creamy Sage-Toasted Pecan Sauce." Not surprisingly, however, the response was greatest for recipes for dessert, with "Coconut-Cream Cheese Cake," an offering from last summer's "Lowcountry Cuisine: A Summer Food Passions Special Section," enthusiastically enjoyed by everyone who tried it. Filled and topped with luscious creamy frosting and baked into three sky-high layers, coconut cake can be the perfect celebratory cake for New Year's Eve and other occasions yet to come. With 2012 spread out before us, there are plans underway for recipes you will surely want to try. Some easy, some challenging and some squarely-in-between.
